Single-origin Brazilian from Fazenda Ambiental Fortaleza — the Croce family's celebrated regenerative farm in the Mococa region of Brazil — sourced through their Bob-O-Link program that pays smallholder farmers for quality, not just volume. This is the Serra dos Ciganos lot, natural-processed under the Brazilian sun so the fruit dries right on the bean and drives every bit of sweetness inward.

Natural process is where Brazil shows off. Heavy body. Milk chocolate up front, roasted peanut and caramel through the middle, a whisper of dried fruit on the back end. Low acidity. Sweet without a thing added. Nothing sharp, nothing to fight — just a smooth, grounded cup that holds its line.

Roasted to a true Medium — City+, right where the natural sweetness and the chocolate meet. Not so light it turns bright and busy. Not so dark it buries the fruit. Balanced. Composed. Under control.
